SUMMER SARDINE SALAD SNACK

INGREDIENTS

  • 120g can Lucky Star Sardines
  • 4 large lettuce leaves
  • 1 large carrot, sliced into matchsticks
  • 1 small red pepper, sliced into strips
  • ¼ cucumber, sliced into matchsticks
  • Milled black pepper

 

Spread

  • 15ml (1 Tbsp) chopped fresh parsley
  • 15ml (1 Tbsp) chopped fresh mint
  • 125ml (1/2 cup) fat-free smooth cottage cheese
  • Milled black pepper

METHOD

Spread

  • Mix together all the ingredients. Set aside.

 

Summer Sardine Salad Snack

  • Drain the sardines and break each sardine in half.

 

  • Dollop 15ml (1 Tbsp) of the spread in the middle of each lettuce leaf. Pile on strips of carrot, red pepper and cucumber. Top with sardine halves and season with a little pepper.

NOTES

Using Lucky Star Smoked Sardines in this dish gives it an interesting taste dimension. This is a very nutritious lunchbox option for children or the perfect take-to-work lunch.

You can replace the Sardines with 400g Lucky Star Pilchards or, for a spicier alternative, you can replace the Sardines with 400g Lucky Star Pilchards in Chilli Sauce or 400g Lucky Star Pilchards in Sweet Chilli Sauce.
