INGREDIENTS

  • 425g can Lucky Star Middlecut
  • 100g macaroni
  • 6 eggs
  • 4 Tbsp grated cheddar cheese
  • Salt and ground black pepper
  • Butter and oil
  • 8 courgettes, trimmed and coarsely grated
  • 1 Tbsp chopped thyme or ½ tsp dried thyme
  • 2 tomatoes, thinly sliced
  • 2 slices white bread, trimmed and cut into small cubes

METHOD

  1. Drain the middlecut, remove the bones and break the meat into chunks.
  2. Cook the macaroni in a large saucepan of salted, boiling water, as instructed, until tender but firm to the bite. Drain in a colander, then tip into a large bowl.
  3. Whisk the eggs in a large bowl. Add the middlecut with the macaroni and grated cheese. Season with salt and pepper.
  4. Heat a little butter and oil in a medium frying pan and stir-fry the grated courgettes and thyme for about 3 minutes until lightly cooked. Level the surface.
  5. Spoon the egg, noodle and middlecut mixture on top and cook over very low heat for about 5 minutes until the frittata is nearly set. Remove from the heat.
  6. Arrange the sliced tomatoes neatly on top and scatter over the bread cubes. Place under the oven griller for about 5 minutes until the crumbs are crunchy. Serve hot, garnished with extra thyme sprigs if you wish.
