MAIZE MEAL PILCHARD CAKES WITH TOMATO SMOOR

INGREDIENTS

  • 400g can Lucky Star Pilchards in Tomato

Maize Meal Cakes

  • 2½ cups vegetable stock or water
  • Salt and ground black pepper
  • 1 cup maize meal
  • 100g grated cheddar cheese

Tomato Smoor

  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • Oil
  • 410g can chopped tomatoes
  • Sauce from the can of pilchards
  • Sugar
  • Roughly chopped parsley for garnishing

METHOD

  1. Drain the pilchards; keep them whole. Save the sauce for the tomato smoor.

 

Maize Meal Cakes 

  1. Bring the stock or water to the boil with a little salt and pepper in a medium saucepan. Quickly whisk in the maize meal.
  2. Cover and cook over very low heat for about 10 minutes until the maize meal is cooked. Remove from the heat. Stir in the cheese and set aside to cool.

 

Tomato Smoor

  1. Fry the onion and garlic in a little oil in a medium saucepan until soft. Add the chopped tomatoes and sauce from the can of pilchards. Season with salt and pepper and a pinch of sugar. Simmer uncovered until the sauce thickens slightly.
  2. Preheat the oven griller. Form the maize meal into eight flattish cakes and place on a greased baking tray. Top with pilchards. Grill until golden brown and piping hot.
  3. Place the pilchard cakes on plates, spoon on the tomato smoor and garnish with parsley.

NOTES
